Description
Idiazabal is a sharp and fruity cheese made in Pais Vasco, Spain. It is made from ultra-rich milk from the Latxa sheep, which produce no more than a liter a day. It is then smoked over Hawthorne and cherry wood and aged for a minimum of 6 months, for an authentic taste. We like to have this cheese paired with other Spanish cheeses on a charcuterie board with cured meats and crackers.
