Description

Golden Fleece is a unique Manchego like cheese but with delicate floral and saffron notes throughout the cheese. It is aged 4 months for a smooth and buttery texture with a hint of acidity and saffron finish. It is all processed and done by cheesemaker Antonio Poves who has his own dairy farm in Castilla La Mancha, Spain with artisanal sheep, goat, and other milk cheeses.
