The cheese is known for its distinctive purple rind, which is the result of soaking the cheese in red wine for 48-72 hours before beginning the aging process, which is typically 3 to 5 months. This soaking not only imparts a beautiful color to the rind but also infuses the cheese with a subtle wine flavor. The cheese itself is semi-soft and creamy with a slightly sweet and fruity taste.
